Swedish pancakes, culture on lodge breakfast menu

TINTON FALLS – Swedish pancakes with lingonberries (Swedish cranberries) and whipped cream will be some of the traditional fare served for breakfast at an open house hosted by the Dalahast Lodge on Saturday, April 12, from 9 a.m. to 2:30 p.m.

Dalahast’s open house will be held at Luther Memorial Church, 818 Tinton Ave. (Route 537), Tinton Falls. Those who attend the breakfast are encouraged to wear an authentic folk costume if they have one.

The cost for the breakfast is $5 for adults and $2 for children under age 12. Delicious cakes and coffee will also be served.

The continuous program for the day includes Scandinavian music, the opportunity to meet Miss Sweden Day, children’s activities, folk dance lessons and story corner, Lucia and folk dance CDs available for purchase, and Scandinavian and Dalahast information tables.

Dalahast Lodge No. 742, Vasa Order of America, was founded on April 17, 1988. The Vasa Order welcomes men and women over 14 years of age of Scandinavian roots, (Swedish, Norwegian, Danish, Finnish or Icelandic) and their families who would like to rediscover the traditions of their forefathers, and those who are not of Nordic ancestry but are committed to the promotion and advancement of Swedish and Nordic heritage and culture.

Swedish pancakes are thin pancakes that are served for breakfast, but Swedes also prepare them for supper. The lodge recipe:
Swedish Pancakes
3 eggs
2 ½ cups milk
1 ¼ cups flour
1 tablespoon sugar
½ teaspoon salt
2 tablespoons melted butter
½ teaspoon vanilla, optional

Combine all the ingredients and mix until smooth. Heat a 10-inch nonstick skillet over medium heat until very hot. Lightly butter the skillet and pour ½ cup of the batter into it. Swirl the pan to expand the batter into a thin layer.

Cook until bubbles form and the pancake is golden brown on the bottom, about 1 ½ minutes. Flip over and continue to cook for about one more minute. Remove from the pan. It should not be necessary to add more butter to the pan for more pancakes.

Fold each pancake in half or roll. Top with a dollop of lingonberries or strawberries (or maple syrup) and whipped cream. Enjoy!
