Over the past years many companies have offered products that are labeled as “Professional Style” knife sharpening that have a series of pull through slots with either metal rods, or porcelain rods that sharpen the knife. The same companies have also sold electric knife sharpeners that have stone wheels that spin at high speeds, and the owner then pulls the knife through. While these can lead to a “sharp edge”, they also lead to a damaged knife with dings, dents, and the occasional broken tip. This leads to a very dangerous knife that dulls easily, which then leads to the home cook putting more pressure on the blade, and may lead to injury.
