From your garden to your table . . .

   If you watered through all the hot weather and your garden is producing all that extra zucchini, tomatoes, beans, etc., you are probably giving lots away, canning and/or freezing. Hopefully you also are looking forward to another recipe for some of your extra produce.
   Easy Roasted Vegetables:
   Most root vegetables can be roasted together on one large rimmed baking sheet. The trick is to cut them into similar size pieces and not overcrowd them.
   Preheat oven to 400 degrees. Peel and cut vegetables into about 2-inch pieces. Toss with one to two tablespoons of olive oil, one tablespoon of your favorite dried herb; ½ teaspoon kosher salt and ¼ teaspoon coarsely ground black pepper.
   Spread in a single layer on a rimmed baking pan. Stir occasionally and roast about 35 minutes or until vegetables are fork-tender and lightly brown.

   The West Amwell Township Agricultural Advisory Committee is presenting this series of recipes in an effort to promote gardening and other agricultural practices.
   July 27 (Friday) is the last chance to enter your garden in our first township Garden Contest. Gardens will be judged on Aug. 4 and prizes awarded in the following four categories: Most Productive; Most Visually Pleasing; Greatest Variety; and Most Creative.
   Gardens can be vegetables, fruits, herb, or any combination thereof. Gardens must be located in West Amwell Township. Your name, address, phone number and/or email must be received by July 27.
