Bernie Meader has the following suggested recipe for some of your extra zucchini:
Zucchini Onion Pie
— Three eggs.
— One cup grated parmesan cheese.
— One-half cup canola oil.
— One tablespoon minced fresh parsley.
— One garlic clove, minced.
— One-quarter teaspoon salt.
— One-eighth teaspoon pepper.
— Three cups sliced zucchini.
— One cup biscuit/baking mix.
— One small onion chopped.
In a large bowl, whisk the first seven ingredients. Stir in zucchini, baking mix and onion. Pour into a greased 9-inch deep dish pie plate. Bake at 350 degrees for 25-35 minutes or until lightly browned. Serves six.
