Kashering the kitchen while continuing to serve 130 residents 3 meals on the same day.
2. What are some of the special products you order?
Handmade Shmura matzah-chubs, egg kichel, shank bones
3. How many boxes of Matzah do you order?
280 boxes
4. How much matzah meal? 50 lbs, Eggs? 90 dozen, Cakes? 14 full sheet cakes, 30 rolls, 24 dozen cookies, Bottles of Wine? Only 15
5. How much staff do you need to prepare the kitchens for Passover? 20
6. How many days does it take to Clean the Kitchen for Passover? At least 3
7. How many meals are usually served on the campus during Passover? 960 meals
8. How many tables and Seder plates do you usually prepare for the Seders?
24 tables, 24 plates, and 90 individual plates
9. How many meetings are needed to coordinate the two Passover Seders?
6 at least we start the planning in the first week of January.
10. What is the resident’s favorite thing to eat on Passover– Matzah Brei
In addition to all that Chef Bobby Maffei and the dietary staff does our Recreation Director Jackie Kott, Executive Director Anna Simmons and their staff coordinate the Seders and Services with Rabbi Bryan Kinzbrunner. They also coordinate the Chomezt burning with the residents and Rabbi Bryan Kinzbrunner. Hagaddas, Matzah Covers yarmulkas are inventoried, reservations from the family members attending the Seders are coordinated, and we have a seating chart for each table- which is like putting tables for a wedding together.
