Fitness guru’s healthy food guide benefits Elijah’s Promise

NORTH BRUNSWICK — A local man is trying to help residents eat healthy — while also helping residents eat.

Larry Campanella is donating half of the proceeds from his $10 “Larry’s Healthy 21 Day Food Guide” to the Elijah’s Promise soup kitchen in New Brunswick.

“My desire to give to Elijah’s Promise stems from this great benevolent organization feeding over 2,000 meals each week. I am a retired special education teacher in New Brunswick and have learned a lot about what they do,” Campanella said. “This is not the first time I have donated to them, as my CD ‘Golden Classics’ in 2013 was also a fundraiser for them. This is also the perfect time of the year to help them around the holidays, as well as including great recipes for the holidays as well.”

The North Brunswick resident is a gym owner, personal trainer, bodybuilding promoter, competitive bodybuilder and fitness author — but also has the backing of his wife, who is a food scientist, for all of his recipes.

“My inspiration for this book was to help others enjoy a healthy lifestyle by eating nutritious food and by including recipes for great taste as well. Just because these recipes are nutritious does not mean that they are not delicious. I have been eating healthy for over four decades and have helped others with nutritional meal planning as a personal trainer over the years,” he said.

Some recipes include several healthy varieties of preparing sweet potatoes (casserole, roasted and steamed), as well as healthy apple wheat loaf or muffins (also available gluten-free) and a variety of pancakes such as pumpkin and oatmeal.
